Salsa Verde con Queso Velveeta (Verde Velveeta Dip)
Makes 3-4 cups

1 lb Velveeta cheese -- cubed
6 oz Arriba! Medium Green Salsa
1 poblano or anaheim pepper -- cleaned & diced
1/2 cup milk
2 green onions -- chopped
3 oz fresh mushrooms -- sliced

Using a double boiler, bring water in bottom pan to a rapid boil.
Combine all ingredients in top pan and place over boiling water.
Continue to stir until cheese is completely melted and blended with other ingredients.
Add additional milk if thinner consistency is desired.
Serve with favorite corn tortilla chips.
