Sopa Ranchera (Ranch Soup)
Serves 4
| 1/4 cup | chopped onion |
| 1 tbsp | cooking oil |
| 4 cups | chicken broth |
| 1/4 cup | rice |
| 8 oz | Arriba! Medium Red Salsa |
| 1/4 tsp | salt |
| dash pepper | |
| 8 oz | frozen green peas |
In skillet cook onion in oil until tender.
Stir in broth, rice, Arriba! Medium Red Salsa, salt, and pepper, and bring to boil.
Reduce heat, cover, and simmer 25 minutes.
Stir in peas and simmer, covered, for 5 minutes more.
