Arriba! Arroz Verde (Arriba! Green Rice)
Serves 4
| 8 oz | Arriba! Green Salsa |
| 1/4 tsp | garlic powder |
| 1 cup | onion -- coarsely chopped |
| 1/2 cup | fresh spinach -- coarsely chopped |
| 2 tbsp | olive oil |
| 1 cup | parsley sprigs -- flat-leaf |
| 1/4 cup | cilantro -- chopped |
| 2 1/2 cups | chicken broth -- divided |
| 1 1/2 cups | long-grain white rice |
Place Arriba! Green Salsa, garlic powder, onion, spinach, parsley, cilantro and 1/2 cup stock in blender and process until smooth. Set aside.
Heat oil in medium saucepan over medium-high heat until it almost starts to smoke.
Add rice and cook, stirring 3 to 5 minutes until golden brown.
Add pureed ingredients to rice and continue cooking over medium heat, stirring gently to incorporate mixture well into rice.
Add remaining broth and salt to taste.
Bring to a boil, stirring to mix ingredients.
Cover and cook over medium-low heat 15 to 20 minutes until rice has absorbed all liquid.
(Rice is ready when separate kernels of rice are tender but firm and there is no liquid left in bottom of pan).
