Tacos de Pescado (Fish Tacos)
Serves 2
| 1/3 | package sole fillets -- frozen and breaded |
| 2 2/3 oz | salsa -- Arriba! |
| 2 | whole corn tortillas |
| 1/2 cup | Cabbage -- Green |
| 2 2/3 tbsp | Cilantro |
| 1 | whole Lime |
Bake fish fillets according to package directions.
Warm tortillas by placing them one at a time in a hot dry skillet for about 15 seconds on each side.
Cut each sole fillet in half lengthwise and place in the center of a warm tortilla.
Top the fish with 1/4 cup of cabbage and a sprinkle of cilantro.
Spoon 3 tablespoons of salsa over the top.
Fold each taco in half and serve wtih lime quarters to squeeze on it.
