Enchiladas de Carne al Carbon (Beef Enchiladas)
Serves 2
| 1 jar | Nortena Arriba! Red Enchilada Sauce |
| 1 lb | ground beef -- chopped |
| 1 | large chopped onion |
| 4 | garlic cloves -- chopped |
| 1 | poblano or bell pepper -- chopped |
| 1 lb | Monterey jack cheese -- shredded |
| 6 | corn tortillas -- (10-inch) |
| 1/2 | bunch fresh cilantro -- shredded |
| salt and pepper to taste |
In skillet (medium high) thoroughly saute beef, 1/2 onion, garlic, and pepper (add oil if necessary).
Cover and remove from heat.
Prepare the corn tortillas by separately dipping them in Norteņa Arriba! Red Enchilada sauce and heating in a Teflon skillet (medium heat) for 15 seconds on each side.
Remove tortilla and fill with 2 tablespoons of cooked mixture, add cheese, and roll into a cylinder (seam down).
Liberally pour heated enchilada sauce over enchilada and garnish with cheese, cilantro and onions.
