A fire-roasted red salsa accented subtly with smoky chipotle
in an adobo sauce. This chipotle (also a mora chile) is actually
a jalapeno which has been smoked, dried and mixed in a sauce of
peppers and spices. This blend of chipotle and roasted vegetables

Nortena Arriba! Tomatillo al Carbon
Salsa
A traditional favorite of Mexico. We combine the ever popular
tomatillo roasted over an open grill with the heat and flavor
of the fresh serrano pepper. The tomatillo is a tart green fruit
with a husk that resembles but is not part of the tomato family.
The serrano chile, smaller but similar to the jalapeno, is one
of Mexico's most popular fresh chiles. Mixed together and roasted
with a touch of cumin, this salsa is an intriguing delight.

Nortena Arriba! Spicy
Dark Red Enchilada Sauce
This enchilada sauce gets its deep rich color and taste from
a combination of ancho and chipotle chiles. The ancho chile is
the most popular dried chile in Mexico and the US! A dried poblano
chile, its smoky-sweet flavor is the basis for numerous Mexican
gravies. The chipotle (also a mora chile) is actually a jalapeno
which has been smoked, dried and mixed in a sauce of peppers and
spices.
Check for the recipe on the label, which teaches a simple
technique of enchilada making that turns leftovers into
gourmet meals.
